Any tasting notes that appear against the beers are the personal opinions of the authors. If the authors disagree on any aspect then their initials appear before their individual opinion.

Chimay - 4.8% alc/vol

Chimay Bleue - 9% alc/vol

Comments - First brewed 1948. Sold as Grande Réserve in 75cl corked bottles.
Tasting Notes - Accomplished "top of the range" Trappist ale that falls slightly short of the Rocheforte and Westvletern benchmarks unless aged well in a good cellar, a process which also eliminates the tendency towards over-fizziness when young. After two or three years you will be rewarded with a noble, smooth, rounded and warming beer which compliments its rich vinous character.

Chimay Rouge - 7% alc/vol

Comments - Sold as Première (first beer of the original brewery) when in 75cl corked bottles.
Tasting Notes - A good, rounded fruitiness redeems what could otherwise be a disappointingly ordinary beer. Can have an intrusive fizz even when aged for a few years.

Chimay Triple - 8% alc/vol

Comments - Prior to 2001 was known as Chimay Blanche. When in 75cl bottles called Cinq Cents in celebration of the 500th anniversary of the town of Chimay.
Tasting Notes - An accomplished ale, full in taste yet surprisingly delicate for a Trappist brew. Larger quantities of Hallertau hops used than in other Chimay brews helps account for its stronger hop character.
